SEPERATE THE WHEAT FROM THE CHAFF

Our Spelt Whisky is a celebration of the spelt grain's uniqueness. By choosing not to filter out the grain, we capture its full essence, resulting in a rich and refined flavour profile. The extended fermentation time of up to two weeks, allows for a deeper development of flavours, bringing forward a whisky that embodies flavours like dried dates, apricot, slightly peated, with hints of honey leather and marzipan and raisins. The combination of light peat and the short finish on Moscatel casks makes for a very memorable experience. By choosing spelt grain, this whisky is not just a drink; it's a reflection of our commitment to showcasing the natural qualities of diverse grains and production methods.
